Appetizer: Mexican Cheesecake

Mexican Cheesecake

Just in time for Super Bowl is this hardy appetizer cherished by men.  You make it ahead and take is out to serve at room temperature about 30 minutes before game time.

2- 8 ounce packages cream cheese
1 ½ cups sour cream, divided
1 envelope taco seasoning
3 eggs
6 ounces shredded cheese
1-4 ounce can green chilies
1 cup chunky salsa
Chips, fresh vegetables and crackers

In a large bowl, beat together the cream cheese, ½ cup sour cream and the taco seasoning mix.  Add the eggs, one at a time.  Stir in the shredded cheese and chilies.  Transfer the mixture to a 9 inch baking dish, misted with cooking spray.  Bake at 350 for 35 minutes or until center is almost set.  Cool on a rack.  Refrigerate overnight.  Before serving, spread 1 cup of sour cream over the top and spread the salsa on top.  Serve at room temperature.  Serves a large crowd.
