Jambalaya
This quick and easy Jambalaya is a satisfying one dish meal. You can make this version as spicy as you like or keep it mild. With the addition of the healthy brown rice, this entrée is filling and can be used as a Back to School supper or a game-day crowd pleaser.
1 cup instant brown rice, uncooked
1 pound Kielbasa
1 cup chopped onion
½ cup diced red bell pepper
½ cup chopped celery
1/8 teaspoon Cayenne pepper
½ teaspoon thyme
½ cup Picante sauce
4 drops hot sauce (optional)
In a small sauce pan, cook the rice according to the package directions. Slice the Kielbasa in ½ inch circles and sauté in a large skillet. Add the onion, bell pepper and celery and continue to cook until the vegetables are soft. Add the Cayenne pepper, thyme, Picante sauce, and if preferred, the hot sauce. Cook the mixture for an additional 3 minutes. Add the cooked rice to the sausage mixture in the skillet and heat thoroughly. Serves 6.
