BBQ Chicken Flatbreads

BBQ Chicken Flatbreads

The combination of your favorite barbeque sauce and green chilies gives this appetizer the extra kick.  The new deli breads are the base, but you also could use an English muffin or even serve the chicken mixture wrapped in a warm tortilla.  On a crisp fall day, this party food can be the replacement for a sandwich with a steaming mug of soup. 

1 onion chopped
2 teaspoons olive oil
1 ½ cups cooked, diced chicken
2/3 cup BBQ sauce
4 ounces chopped green chilies
1 ½ teaspoon garlic powder
¼ teaspoon pepper
6 flatbreads, split in half
6 ounces shredded mozzarella

In a saucepan, sauté the onion in olive oil until translucent.  Add the diced chicken, BBQ sauce, green chilies, garlic powder, pepper and heat through.  Spread the chicken mixture on the flatbread and top with the mozzarella.  Place the BBQ Chicken Flatbreads on a baking sheet and broil 4 – 6 “from the heat for 3 minutes or until the cheese melts.
Serves 12
