Greek Layered Dip
Hummus is a healthy party snack food to watch all the fashion and Oscars at the Academy Awards Show next Sunday! The tahini in the hummus gives the dish a smooth creamy texture and can be found by the olives in your grocery store.
2 cups hummus (recipe follows)
¾ cup cucumber, chopped
1 cup cherry tomatoes, halved
½ cup feta cheese, crumbled
½ cup black olives, sliced
2 scallions, diced
Spread the hummus on a 10-inch platter. Top it with cucumber, tomato, feta cheese,
olives and onions. Serve the dip with chips or crostinis, chopped vegetables or pita wedges.
Hummus
1 – 15 ounces can of chickpeas or garbanzo beans, drained and rinsed
3 garlic cloves, minced
½ cup tahini (sesame seed paste)
¼ cup fresh lemon juice
¼ cup water
¾ teaspoon salt
Process the beans in a food processor until smooth. Add the remaining ingredients;
pulse until blended. Refrigerate the hummus in air-right container. Serve with crostinis, cut vegetables, pita wedges, crackers or use as the base for Greek Layered Dip.
