 Chocolate Truffles for Valentine’s Day

I found this recipe in the Sweet Potato Queen’s Cookbook, Browne, pgs. 160-161 and have used it every holiday since, especially Valentine’s Day.  These easy and affordable chocolate truffles make a lovely gift for anyone.  With only three ingredients, you have a decadent chocolate treat. The secret to a fuss-free truffle is to let the boiled chocolate cool slightly and use two spoons to dip out the chocolate into a truffle-sized ball and place on a tray lined with parchment paper.  Place the tray of truffles in the refrigerator to cool and take shape. Use wet fingers to further shape and roll the chocolate into glossy truffles. 

1 can sweetened condensed milk
3 tablespoons Cocoa powder
2 tablespoons butter

In a heavy saucepan, mix together the milk and cocoa powder over medium heat and stir constantly for 10 minutes or until the mixture thickens. Turn off the heat and stir in the butter. Let the mixture cool slightly. Wet your fingers to shape the chocolate mixture into small balls/truffles. Truffles can be served plain or rolled in powdered sugar, sprinkles, nuts, etc.  Makes 1 dozen truffles.
