Brown Sugar Glazed Meatloaf
This heirloom recipe and classic comfort food has been my most requested recipe over the past two decades. It is the brown sugar glaze that singles out this meatloaf. Make plenty for leftovers, because this dish is equally wonderful the second day as the makings for a cold sandwich at lunch.
1 pound ground beef
1 cup oatmeal (original or quick-oats)
1 onion, chopped
1 egg
1 cup tomato sauce
½ teaspoon pepper
Glaze:
½ cup catsup
1 teaspoon prepared mustard
¼ cup packed brown sugar
In a large bowl, mix together with your hands the ground beef, oatmeal, onion, egg, tomato sauce and pepper. Shape into a loaf and place in a casserole dish coated with cooking spray. Bake at 350 for 60 minutes. After the first thirty minutes of baking, brush the glaze over the meatloaf and return to the oven for an additional 30 minutes. Serves 6.
