Fourth of July: Gooey Cookie Bars



Gooey Cookie Bars

For your fireworks celebration, pack this quick and easy cookie bar for that outdoor picnic.  Any cake mix can be used, offering you a variety of possibilities.  Try the red velvet cake mix for a decadent and moist brownie.  The pictured cookie was made with a classic yellow cake mix. This cookie recipe makes plenty and in a taste test was a favorite of men and kids.


1 (18.25 oz) cake mix
2 eggs
1/3 cup canola oil
14 ounces sweetened condensed milk (not evaporated milk)
1 cup chocolate chips
¼ cup butter, cut in small cubes


In a large bowl, beat together the cake mix, eggs and oil. To form a base, press 2/3 of the cake mixture into the bottom of a13x9x2 cake pan sprayed with cooking spay. In a small microwaveable bowl, mix together the milk, chocolate chips and butter and microwave on high for approximately 1 minute, or until smooth when stirred. Pour the chocolate mixture over the cake base. Using a teaspoon, spoon the reserved cake mixture evenly on top of the chocolate mixture. Bake at 350 for 20-25 minutes or until lightly browned.  Cool and cut into bars. Makes approximately three to four dozen cookie bars.
