Tomato Relish



Tomato Relish

This versatile relish can be used as a side-dish, a crostini topping or a salad condiment.  My preference is to serve the Tomato Relish over romaine lettuce as a first course. If you have heirloom tomatoes from your garden, diced those and use instead of the cherry tomatoes and it’s a delicious way to use up your summer harvest. The simple recipes using basics ingredients are the freshest tasting.

2 pints cherry tomatoes
½ red onion, diced
2 garlic cloves, minced
3 tablespoons fresh basil or 1 tablespoon dried basil
2/3 cup olive oil
1/3 cup Balsamic vinegar
Salt and pepper

Cut the cherry tomatoes in half.  In a medium size bowl, toss together the tomatoes, diced onion, garlic and basil.  In a small jar, combine the oil and vinegar and shake to emulsify.  Pour the marinade over the tomato mixture and salt and pepper to taste. Store the relish in the refrigerator.
