Left-Over-Halloween-Candy
Cookies
Back by popular demand is the cookie recipe designed to use
up that left over Halloween candy. This
recipe is my second most requested on the Food Stirrings blog. I have diced up
everything from candy bars to broken suckers and it always turns out tasty and
interesting. Baking these special
cookies has become a part of our Halloween ritual.
2 cups left-over-Halloween-candy chopped into bite size
pieces (life-savers, twizzlers,
candy bars,
suckers, tootsie rolls, M&Ms, jelly beans, etc.)
3 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
3 sticks of butter, room temperature
1 ½ cups sugar
1 ½ cups packed brown sugar
4 eggs
1 tablespoon vanilla
3 cups oats
3 cups chocolate chips (optional)
2 cups coconut (optional)
2 cups nuts (optional)
In a large bowl, combine the flour, baking powder, baking
soda, cinnamon and salt. In a separate
bowl, beat the butter till creamy and gradually add the sugars. Beat in eggs, one at a time, and add
vanilla. Stir the creamy mixture into
the flour mixture until just combined.
Add the chopped candy, oats and if using the chocolate chips, coconut
and nuts. Drop ¼ cup of cookie dough spaced
3 inches apart on to a cookie sheet lined with parchment paper. Bake at 350 for 15 minutes. Makes 3 dozen large cookies.
