Lemon Drop Tea Cookies



Lemon Drop Tea Cookies

These delicate tea cookies are a must for lemon lovers.  They bake up like a sugar cookie and have just the right amount of bright lemony flavor.  To determine if the cookie is baked through, look at the bottom of the cookie that should be a light brown. These are addictive, so you may want to double the recipe.

1 box lemon cake mix
1 egg
½ cup butter, melted
Zest of one lemon
1 teaspoon lemon extract
½ cup sugar

In a mixing bowl, beat together the cake mix, egg, melted butter, lemon zest and lemon extract.  Refrigerate the cookie dough for about 30 minutes or until stiff.  Spoon a tablespoon of dough into your palms and roll into a ball.  In a small bowl filled with the sugar, roll the cookie until coated.  Place the cookie ball on a baking sheet lined with parchment paper and bake at 350 for 8 minutes. Yields 3 dozen cookies.
