Oatmeal Raisin Cookies
This old-school classic has many similar recipes. What
separates this version is the first step to plump up the raisins by soaking
them in vanilla and eggs. This step can
be done in advance the night before, refrigerated and be ready for the dough
the next day. I also like this recipe
because it makes a lot, six dozen cookies.
And this traditional home-made cookie freezes well to have for the
future.
3 eggs, well beaten
1 cup raisins
1 teaspoon vanilla
1 cup butter
1 cup brown sugar
1 cup white sugar
2 1/2 cups flour
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons baking soda
2 cups oatmeal
3/4 cup chopped, toasted nuts (optional)
In a small bowl, combine the eggs, raisins and vanilla and
let stand for 1 hour. In a large mixing bowl, combine the butter and
sugars. Add the flour, salt, cinnamon
and baking soda to the butter mixture.
Mix together well. Add the raisin
mixture, oatmeal and nuts. The dough will be stiff.
Drop by heaping teaspoon on to a baking sheet lined with parchment
paper. Bake at 350 for 10 minutes. Makes 6 dozen cookies.
