Blender: Banana Nut Bread
 
 
Making this moist quick bread in a blender adds to the convenience and simplicity of this recipe.  The clean up is easy and the results are delicious.
 
11/4 cup flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 ripe bananas
1/3 cup canola oil
2 eggs
1/2 cup toasted walnuts, optional
 
In a mixing bowl, combine the flour, sugar, baking soda and salt.  In a blender, combine the bananas, oil and eggs and process.  Slowly add the dry mix to the blender and process.  If using nuts, stir them into the banana mixture. Pour the mixture from the blender evenly into 1 large loaf pan coated with cooking spray or 3 mini loaf pans coated with cooking spray.  Bake at 350 for 40 minutes for the large loaf, or 30 minutes for the mini loaves.  Check for doneness with a toothpick inserted into the center that comes out clean. Cool on a rack.
