Father's Day Ribs

Grilled Ribs

There are two secrets to this fool-proof recipe.  First, buy the meat cut labeled “country-style ribs.” This cut is much meatier and well marbleized for more flavor.  The second secret is to parboil the meat before grilling.  This process cooks and tenderizes the meat and can be done days in advance.  These man-pleasing ribs are a traditional favorite and a definite winner.

4 pounds of country–style ribs, cut in pieces
2 tablespoons salt
Favorite BBQ sauce

In a large soup pot, cover the ribs with water, add the salt and simmer for 1 hour. Drain the ribs and refrigerate covered until ready to grill.  Set up grill with hot coals and place the ribs on the grill turning twice until sizzling (about 10-15 minutes depending on the heat).  Just before removing the ribs from the grill, baste the ribs with your favorite BBQ sauce.  Remove the ribs from the grill onto a serving plate and let rest for 10 minutes.  Serves 6.
