Picnic-In-A-Jar



Picnic-In-A-Jar

How convenient to have a meal in a jar, ready to serve for each individual.  And this dressing is very user friendly since there is no sugar (rather rare in dressings) and no mayo for summer spoilage.  Kids love this presentation and it’s handy, delicious and fun for any outdoor event

4 large canning jars
2 cups penne pasta
2 cups diced cooked chicken (optional)
2 cups fresh vegetables (broccoli, red onion, cauliflowers, carrots, bell pepper, etc.)

Dressing:
1/2 yellow onion chopped
1 tablespoon Dijon
6 tablespoons apple cider vinegar
2/3 cup olive oil

In a sauce pan, cook the pasta al dente and drain. In a small food processor or blender, prepare the dressing by pureeing the onion, Dijon, vinegar and oil.  In a large canning jar, layer the cooked pasta, chicken and vegetables.  Drizzle 2-3 tablespoons of dressing over the top of the layers and seal the jar.  Repeat the process in the remaining 3 jars.  Chill the jars.  Serve at room temperature.
