Back-To-School: Oatmeal Brulee

Oatmeal Brulee
 
This oatmeal mix is a staple in my kitchen.  It keeps forever and is always available for a quick breakfast. And this mix has much less sugar and salt than the commercialized versions.  The Brulee additions take this from hearty to a real treat with the crackling caramelized sugar top.
 
Oatmeal Mix:
6 cups quick oats
1 1/3 cups dry milk
3 cups dried fruit (raisins, dried cranberries or dried apricots)
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon cinnamon
1 teaspoon salt
1/4 teaspoon cloves
 
In a large container with a lid, combine all the ingredients. To make one serving, add ½ cup of boiling water to ½ cup of the oatmeal mix and stir. Let the prepared oatmeal sit for one minute and serve warm. Makes 12 servings.
 
Brulee:
1/4 cup diced fresh fruit (peaches, strawberries, raspberries or blueberries)
1 tablespoon sugar
 
Mist a ramekin with cooking spray.  Place the diced fruit in the bottom of the ramekin and spoon 1/2 cup of prepared oatmeal on top.  Sprinkle the tablespoon of sugar evenly on top and broil for 5 minutes or until sugar is light brown and caramelized.  Serves 1.
