Twice Baked Sweet Potatoes

Twice Baked Sweet Potatoes
 
These re-stuffed potatoes are a real show stopper.  And they can be made days ahead and reheated for convenience. Baking a sweet potato will take 30 minutes to an hour in a 350 oven, depending on the size of the potato.  The potato should be very tender to scoop out the center for twice baked.  To test for doneness, simply pierce the potato with a fork that should easily slide into its center. Enjoy these not only as a holiday favorite, but all-year round.
 
8 sweet potatoes, baked
4 tablespoons butter, melted
1/2 cup brown sugar
1 cup crushed pineapple, drained
Salt to taste
Nuts and or miniature marshmallows
 
Peel off only the top of the baked sweet potato and scoop out the center within a 1/4 inch of its hull. In a large mixing bowl, combine the meat of the sweet potatoes, butter, brown sugar, crushed pineapple and salt.  Spoon the potato mixture into each sweet potato hull.  Place the stuffed potatoes on a baking sheet mist with cooking spray.  Re-heat the potatoes at 350 for 15 minutes.  Add the toppings of nuts and or marshmallows to the sweet potatoes and return to the oven for 5 more minutes. Makes 8 twice baked potatoes.
