Feed a crowd: Chicken Picante

Chicken Picante

With only four ingredients, you will have a crowd pleaser.  This recipe can be easily doubled or even more.  I feed 22 people with this entrée and served it over mashed potatoes.  You can also serve it with noodles, rice or orzo.

4 boneless, skinless, chicken breasts
1 ½ cups picante sauce or salsa
3 tablespoons brown sugar
1 tablespoon Dijon mustard

In a 2 quart shallow baking dish coated with cooking spray, place the chicken, not overlapping.  Mix together the picante sauce, brown sugar and Dijon.  Pour the picante mixture over the chicken.  Bake at 400 for 20 minutes, or until the chicken is done.  Serves 4
