Ginger Muffins

Ginger Muffins

2 cups flour
2 teaspoons ginger
1/4 teaspoon cinnamon
1/4 teaspoon all-spice
1/4 cup raisins
1/4 cup pecans, toasted, chopped
1 stick butter softened
1/2 cup sugar
2 eggs
1/2 cup molasses
1/2 cup buttermilk
1 teaspoon baking soda


In a bowl, mix together the flour, ginger, cinnamon and all-spice.  Stir in the raisins and pecans.  In a separate large bowl, cream together the butter and sugar.  Add the eggs, one at a time, and then the molasses and beat until smooth.  Mix the buttermilk and baking soda in a small bowl and let stand until the mixture begins to foam.  Stir the buttermilk mixture into the molasses mixture.  Add the flour mixture and stir just until moistened.  Fill muffins cups, that have been mist with cooking spray, 2/3 full and bake at 400 for 12 minutes or until a toothpick inserted in the center comes out clean.  Makes 1 ½ dozen muffins.
