Garbanzo Bean Salad
This
healthier salad has lots of flavor and is a favorite at potlucks.
2
cans garbanzo beans, drained
1/4
cup chopped red onion
1/4
cup chopped celery
1/4
cup chopped cucumber
1/4
cup apple cider vinegar
2
tablespoons olive oil
Salt
and pepper
In
a large bowl, toss the beans, onion, celery and cucumber. In a small bowl, mix together the vinegar and
oil and toss with the bean mixture. Salt
and pepper to taste. Serves
6 - 8
