Confetti Corn Salad

Confetti Corn Salad

Just in time for the holiday gatherings is this corn salad that you can make in minutes.  This is a quick side dish that is loved by everyone. You’ll want this recipe for your holiday arsenal.

3 cans of kernel corn, drained
½ cup green or red bell pepper, diced
½ cup chopped scallions

In a large serving bowl, mix together all the ingredients.

Dressing:
¼ cup sugar
¼ cup apple cider vinegar
2 tablespoons olive oil

In a jar, shake together the dressing ingredients, pour over the corn salad and toss. Keep the corn salad refrigerated until serving. Serves 6 – 8.
