Moo Shu Turkey

Moo Shu Turkey

To use up some of that leftover turkey, this recipe is quick, easy and healthy.  For all my vegetarian friends, leave out the turkey or chicken and this dish is equally good with lots of flavor.  While working in China, I picked up this recipe and simplified all the vegetable chopping by replacing it with one bag of slaw. 

3 tablespoons sesame oil
6 scallions, chopped
2 cloves of garlic, minced
1 – 16 oz. bag of coleslaw mix
2 cups turkey or chicken, cooked and diced (optional)
1/3 cup bottled hoisin sauce
2 tablespoons lite soy sauce
Eight large lettuce leaves or 1 – 10 oz package of 6 inch flour tortillas

In a Dutch oven, heat the sesame oil over medium heat.  Add the scallions, garlic, coleslaw mix and sauté 3 minutes. Add the turkey, hoisin sauce and soy sauce and cook for a few minutes until hot throughout the mixture. Remove the moo shu from the heat. Spoon ½ cup of the moo shu on each lettuce leaf or each warm tortilla (warm the tortilla according to its package directions) and roll up like a burrito. Serves 8
