Savory Sausage Quick Bread

Just slice and toast and you have a delectable, satisfying bread with a hot cup of coffee or tea to watch the Macy’s Thanksgiving Parade.  These loaves also make savory gifts for teachers, hostess gifts, bunko group, book club, neighbors, and co-workers. If you need an additional quick bread recipe to your traditional pumpkin, banana nut or zucchini bread, this sausage bread will be a welcomed change.

1 pound sausage, cooked, drained and crumbled
2 ½ cups all-purpose baking mix
¾ cup water
3 eggs, beaten
1 ½ cups shredded sharp cheddar cheese

Spray the bottom and sides of a 9x5x3 inch loaf pan.  In a large mixing bowl, combine the baking mix, water and eggs and blend together well. Stir in the cooked sausage and cheese. Spoon the mixture into the prepared pan. Bake 35 - 45 minutes at 350 or until the loaf browns and a toothpick inserted in the center comes out clean.  Cool in the pan for 10 minutes and remove to a cooling rack for 10 minutes.  This bread freezes well and is served best when sliced and toasted in the oven. Makes 1 large loaf or 4 small loaves.
