Vintage Pecan Crisps
This simple recipe is ideal for cookie lovers who want a crisp cookie on the outside and chewy on the inside. While baking, the cookie spreads a lot, so place the dough on the baking sheet a couple of inches apart. This vintage treat will become a staple in your cookie jar.
1 cup butter, softened
2 ½ cups brown sugar
2 eggs
2 ½ cups flour
¼ teaspoon salt
½ teaspoon baking soda
1 ½ cups or 6 ounces chopped pecans
In a mixing bowl, beat together the butter and brown sugar. Add one egg at a time and mix well. In a separate bowl, combine the flour, salt, and baking soda. Stir the flour mixture into the butter mixture. Stir in the pecans. Spoon about 1 ½ inch ball of cookie dough (about 6 to 8 cookies per sheet) onto a baking sheet lined with parchment. Bake at 350 for about 10 minutes, or until golden brown. Makes 3 dozen.
