How to Make Pesto



Pesto

Traditional pesto is made with sweet basil leaves and pine nuts or walnuts and served with crostinis or baked pita chips.  After you have processed all the ingredients, taste the pesto to determine if you need more garlic or salt. At the end of the summer, you can harvest all your basil using this recipe and freeze the pesto for a winter treat. Pesto can be served as an appetizer, as a sauce for pasta, or a garnish on roasted chicken breasts. 


½ cup walnuts
1 garlic clove, chopped
2 cups packed basil leaves
¼ teaspoon salt
1 cup fresh parsley, chopped
½ cup olive oil

In a food processor, chop the walnuts and garlic. Add remaining ingredients and process. Serves 8.
