Simple Summer Supper: Bruschetta Grande




Bruschetta Grande

A light summer dinner using fresh tomatoes and basil makes this recipe a hot weather favorite. Heirloom tomatoes makes this dish special, but you can use cherry tomatoes or roma tomatoes and still be satisfied with the results.  And growing your own basil in the backyard or in a pot is easy to do and provides you an endless crop to harvest until frost.  This is my summer go-to-meal that is light, satisfying and full of flavor.

6 slices four-cheese Texas toast
6 cups chopped tomatoes
¼ cup chopped fresh basil
2 cloves garlic, minced
Juice of half a lemon
3 tablespoons olive oil
Salt & pepper to taste

Toast the Texas toast according to the package directions.  In a large mixing bowl, combine the tomatoes, basil, garlic, lemon juice, olive oil and salt and pepper.  Plate a slice of toast and spoon the tomato mixture on the sides and a little over the top. Serves 6.
