Valentine's: Red Velvet Brownies



Red Velvet Brownies

For Valentine’s Day, serve up these easy gooey brownie bars.

1 (18.25 oz) Red Velvet cake mix
2 eggs
1/3 cup canola oil
14 ounces sweetened condensed milk (not evaporated milk)
1 cup chocolate chips
¼ cup butter, cut in small cubes

Mist a 13x9x2 cake pan with cooking spray. In a large bowl, beat together the cake mix, eggs and oil. Press 2/3 of the cake mixture in the bottom of the cake pan, forming a base. In a microwavable bowl, combine the condensed milk, chocolate chips and butter and microwave on high for approximately 1 minute or until smooth when stirred. Pour the chocolate mixture over the base. Top with the reserved cake mixture by dropping teaspoonfuls of the cake mixture on top of the chocolate mixture. Bake at 350 for 20-25 minutes until lightly browned.  Cool, cut into bars. Makes approximately four dozen bars.
