Chocolate Truffle Fudge
Some fudges can be dry, crumbly and not worth the
calories. This recipe always produces a
creamy texture with a glossy finish. I
have made this recipe every year for decades, because it is so good and quick
and easy. With a large cookie cutter, you can make giant heart-shaped fudge for
your Valentine celebration or gift giving.
12 ounces semi-sweet chocolate chips
1 cup peanut butter (smooth or crunchy)
3/4 cup dried cranberries or raisins
1 cup toasted nuts, chopped (optional)
Line an 8 X 8 pan with foil.
In a sauce pan, melt together the chocolate chips and the peanut
butter. Remove from the heat and stir in
the cranberries and nuts. Pour the fudge
mixture into the prepared pan and chill until firm (about 1 hour). Cut into squares or use cookie cutters to
make different shapes. Makes 2 dozen squares.
