Blessing Loaf

For your Easter menu, add this lovely and delicious stuffing recipe. I like the vegetarian version, without the sausage, but the sausage does add more substance. This dish will compliment your traditional baked ham, roasted lamb, or chicken. And the best part is it needs to be made ahead and served at room temperature. 

1/2 cup bulk pork sausage, cooked (optional)
4 cups stuffing, prepared
2 teaspoons dried chives
1 tablespoon lemon zest
1/4 cup walnuts, toasted and chopped
1 egg, lightly beaten
1/4 teaspoon pepper
1/4 cup water

Mist a mini loaf pan with cooking spray. In a mixing bowl, combine all the above ingredients.  Firmly press the mixture into the mini loaf pan.  Bake at 375 for 35 minutes or until the edges are brown and the loaf is firm on top.  Let cool for 5 minutes and invert the loaf onto a serving platter.  Slice and serve at room temperature.  Serves 4 – 6. 

Tips:  For the stuffing, you can use 4 cups of your favorite stuffing recipe or prepare 1 box of stuffing mix according to the package directions. For a larger group and more servings, you can double the recipe and bake in a regular 9-inch loaf pan.
