Skillet Macaroni & Cheese



Skillet Macaroni & Cheese

All my taste testers, in the 8 to 80 age range, gave this comfort food a thumbs up. This recipe is easy and convenient to make in minutes and the results are creamy, luscious and deeply satisfying….as comfort food should be.

2 cups pasta
2 tablespoons butter
2 tablespoons flour
1 ½ cups milk
1 ½ cups shredded cheddar cheese
Salt & pepper

Cook the pasta according to package directions.  In a large skillet, melt the butter over medium heat.  Stir in the flour.  Gradually pour in the milk and bring to a boil.  Cook and stir the sauce until thickened, about 2 minutes. Sprinkle the sauce with salt and pepper to taste. Reduce the heat and fold in the cheese and cook until just melted.  Add the cooked pasta to the sauce and stir to mix. Serve while warm. 
Serves 4
