Corn Flake Cookie Bars

Corn Flake Cookie Bars

This is my favorite cookie bar, because it was the very first recipe that started my life-time collection.  I had this peanut butter chewy at my best friend’s fifth grade birthday party and thought it was the best thing I had ever tasted, and it still holds true decades later.

4 cups corn flakes (with or without raisins)
1/4 cup brown sugar
1/4 cup sugar
1/2 cup corn syrup
1/2 cup peanut butter

In a large bowl, place the corn flakes. In a sauce pan, combine the sugars and syrup on medium heat.  Stirring continually, let the syrup mixture slightly boil up once and add the peanut butter. Pour the mixture over the corn flakes and work quickly to mix well. Press the corn flake mixture in a 9 X 13 cooking dish lined with foil.  Cut into squares will still warm.  Makes 2 dozen squares.
