Farm Fresh Tomato & Basil Pasta

Farm Fresh Tomato & Basil Pasta

Growing basil is front and center in my tiny kitchen garden.  I grow it specifically for this recipe. With home grown tomatoes and fresh basil, this traditional pasta dish is seasoned with summer memories and is my favorite go-to-meal for the season. Using whole grain pasta ups the nutritional value, but any pasta will work very well.

5 tomatoes, diced
1 cup fresh basil, chopped
2 tablespoons olive oil
1 garlic clove, minced
2 teaspoons salt
1 teaspoon pepper
Juice of one lemon
6 cups of cooked pasta (penne, rotini, bowtie, rigatoni)

In a mixing bowl, gently toss together the tomatoes, basil, olive oil, salt and pepper and the lemon juice.  Serve the sauce, at room temperature, over the hot pasta.  Serves 4.
