Fresh &Crunchy Cauliflower Salad
If I had found this recipe in a cookbook, I believe I would have passed on it.  But I tried this crisp salad at a potluck and now it has turned into a long-time favorite. With only a few ingredients and very little preparation time, you’ll have a unique and delicious summer compliment to any BBQ, potluck or family meal.
 
1 head of cauliflower
1 can black olives, drained, sliced
4 scallions, sliced
1/2 cup mayonnaise
 
Wash and trim the stem from the cauliflower and break into florets.  In a large mixing bowl, stir together the cauliflower, black olives, scallions and the mayonnaise.  Chill for 3 hours or overnight.  Serves 8.
