Chewy Oatmeal Bars

Chewy Oatmeal Bars
 
As an after-school snack or a breakfast bar, these oatmeal bars are chewy and packed with goodies. This ready-to-go food is kept in the refrigerated and is satisfying for the munchies or to get your day started. 
 
2 cups quick oats
1/2 cup brown sugar
1/2 cup walnuts
1/2 cup raisins
1 cup miniature marshmallows
1/2 cup butter
1/4 cup corn syrup or molasses
1/2 cup peanut butter
6 ounces chocolate or white chocolate chips
 
In a large mixing bowl, combine the oats, brown sugar, walnuts, raisins and marshmallows.  In a saucepan, melt together the butter, syrup and peanut butter.  Pour the butter mixture over the oats mixture and stir thoroughly.  Press the mixture into a 9-inch square microwaveable dish that has been mist with cooking spray.  Microwave the mixture on high, uncovered for 1 1 /2 minutes, turn the dish half way and continue to microwave for another 1 1 /2 minutes, 3 minutes total. Sprinkle the chocolate chips evenly on top.  Refrigerate the oatmeal bars until cool and cut into squares.  Makes approximately 2 dozen bars.
