Chocolate
Chip Cookies
I put out a search for the best chocolate chip cookie
recipe. I wanted the cookie to be thin,
crispy around the edges and chewy in the center and this is the version that
measured up to all my requests. This
cookie also freezes well, and I always keep a bag in the freezer as a ready
dessert.
3/4 cup packed brown sugar
1/2 cup sugar
1/2 cup butter, softened
1/2 cup shortening
1½ teaspoons vanilla
1 egg
1¾ cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate and/or white chocolate chips
1/2 cup chopped walnuts or pecans (optional)
In a large mixing bowl, beat together the brown sugar,
sugar, butter and shortening. Add the
vanilla and egg, and blend well. Stir in
the flour, baking soda and salt; mix well.
Stir in the chocolate chips and nuts.
Drop by tablespoonfuls 2 inches apart onto a cookie sheet lined with
parchment paper. Bake at 375 for 8
minutes or until a light golden brown.
Remove the cookie to a rack to cool. Makes 4 dozen.
