Company Noodles
This is a delicious and easy alternative to rice or potatoes
and compliments any entrée.
1-16 ounces sour cream, divided
1 cup cottage cheese
1 cup onion, diced
1 teaspoon salt
1 teaspoon pepper
8 ounces egg noodles, cooked
1 cup shredded mozzarella or parmesan cheese
In a large mixing bowl, combine 1 cup of the sour cream,
cottage cheese, onion, salt and pepper.
Add the hot cooked noodles and toss.
Pour the noodle mixture into a 2 quart baking dish coated with cooking
spray. Spread the remaining cup of sour
cream over the noodle mixture and evenly sprinkle the cheese on top. Bake covered at 350 for 30 minutes, and
uncovered for 15 minutes or until a deep golden brown. Serves 8
