Loaded Baked Potato Dip

Loaded Baked Potato Dip
 
Served with extra crispy waffle fries or tater tots, this game-day appetizer becomes hearty and satisfying.  Like most dips, they are best served at room temperature.  You can mix together the dip (without the toppings) the day before, refrigerate, take out 30 minutes before serving, and sprinkle on the toppings at that time. 
 
1 – 32 ounce bag waffle fries or tater tots
1 cup cottage cheese
8 ounces cream cheese, softened
1 cup sour cream
1 package Hidden Valley dressing
2 slices bacon, cooked and diced
1/4 cup red onion or scallions, diced
2 tablespoons chopped parsley (optional)
1 cup shredded cheese
 
Bake the potatoes according to package directions, until extra crispy.  In a mixing bowl, beat together the cottage cheese, cream cheese, sour cream and dry dressing.  Pour the dip into a serving bowl and top with the bacon, onion, parsley and cheese.  Serves 8
