Hot Fudge Bread Pudding

So decadent and worth every bite, this bread pudding is similar to one big lava cake and is ideal for the holidays. It’s very easy to assemble and bakes up with a gooey fudgy center.  Since the pudding is best served warm, you can make it ahead and re-heat it.

4 cups cubed bread
2 cups milk
1/2 cup sugar
3 eggs
2 tablespoons butter, melted
1 teaspoon vanilla
1¼ cups chocolate chips 

Mist a deep-sided pie pan with cooking spray and arrange the bread cubes.  In a mixing bowl, whisk together the milk, sugar, eggs, butter and vanilla.  Pour the egg mixture over the bread cubes.  Sprinkle the chocolate chips on top.  Bake at 350 for 35 minutes.  Let the pudding cool to warm before serving, or re-heat it in the microwave or a 200 degree oven.  Serves 6 - 8
