Crunchy Winter Salad

Crunchy Winter Salad

Along with all the winter soups, this crunchy salad is a welcomed compliment.  The dressing has much less sugar than the store-bought and only takes minutes to make.

Red Wine Vinaigrette
 1/2 cup olive oil
1 tablespoon sugar
3 tablespoons red wine vinegar
1/4 teaspoon pepper

In a jar with a tight fitting lid, combine all the ingredients and shake to blend.  Store in the refrigerator.

Salad
 1 (20 ounce) can mandarin oranges, drained
10 ounce salad mix
1 cup nuts, toasted (walnuts, pecans, or slivered almonds)
1/2 cup dried cranberries


In a large salad bowl, toss all the above salad ingredients.  Add the vinaigrette, as needed (you should have dressing left over). Toss and serve immediately.  Serves 8
