Provincetown Kale & Potato Soup

Provincetown Kale & Potato Soup

Kale is trending as this year’s choice of calcium and fiber.  In this hearty soup, you get a generous serving of both in a bowl of steamy goodness.

1tablespoon olive oil
1 large onion, peeled, diced
2 garlic cloves, peeled, finely chopped
8 cup stock (beef, chicken or vegetable)
8 ounces frozen lima beans
13 ounces kielbasa sausage, diced
4 potatoes, peeled, diced
1 bunch (6 – 8 cups) kale, stemmed, chopped
Pepper

In a large soup pot, heat the oil and cook the onion until tender.  Add the garlic and cook for 1 minute.  Add the stock and lima beans and simmer for 5 minutes.  Meantime, in a skillet, sauté the sausage and transfer it to the soup.  Add the potatoes and cover the pot and simmer for 20 minutes, or until the potatoes are soft.  Add the kale and continue to simmer until wilted. Pepper to taste.  Serves 12
