Apple Crowns

Apple Crowns

The baking aroma of apples and cinnamon makes your home smell so cozy.  And these apple pastries can be served warm or at room temperature.  They also freeze well and can be re-heated in a toaster oven.

1 1/3 cups chopped apple (about 1 apple)
1/3 cup chopped walnuts
1/3 cup raisins
1/3 cup sugar, divided
2 tablespoons flour
2 teaspoons cinnamon, divided
Dash salt
1 package large refrigerated flaky biscuits
2 teaspoons butter, melted

In a microwaveable bowl, combine the apples, walnuts, raisins, 3 tablespoons sugar, flour, 3/4 teaspoon cinnamon and salt.  Microwave the apple mixture for 2-3 minutes, until tender.  Flatten each biscuit into a 5 inch circle.  Combine the remaining sugar and cinnamon and sprinkle a tablespoon of the cinnamon mixture on each biscuit.  Top each with the apple mixture.  Bring up the edges and pinch the edges to seal and form a ball.  Place the filled biscuit seam side down into a muffin cup that has been mist with cooking spray.  Brush the tops with the melted butter and sprinkle the remaining cinnamon mixture and a light dash of salt over the tops.  With a sharp knife, cut an X into the top of each.  Bake at 350 for 18 minutes, or until golden brown. Serves 8
