Thai Salad

Thai Salad

This very easy, crunchy salad was served as a luncheon entrée and every single person asked for the recipe.

1 package (16 ounces) of coleslaw
1/3 cup sesame ginger salad dressing
2 cups diced, cooked chicken
1/4 cup peanut sauce
1 sweet red pepper, julienned
2 cups chow mein noodles
3 green onions, chopped


In a large bowl, combine the coleslaw and the salad dressing.  Transfer the slaw to a large serving platter.  Combine the chicken and peanut sauce and place over the coleslaw mixture.  Tops with the red pepper, noodles and onions.  Serves 4-6
