Morning Glory Muffins

Morning Glory Muffins

This muffin is a favorite for a quick breakfast.

2 cups flour
1¼ cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 eggs
1 cup canola oil
2 teaspoons vanilla
1 apple, diced
2 cups shredded carrots
1/2 cup raisins
1/2 cup shredded coconut (optional)
1/2 cup pecans, chopped

In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt.  In a separate bowl, combine the eggs, oil and vanilla.  Stir the egg mixture into the dry ingredients until just combined.  Fold in the apple, carrot, raisins, coconut and pecans. Fill greased or paper-line muffin cups three-fourths full.  Bake at 350 for 15 minutes or until a toothpick inserted near the center comes out clean.  Cool for 5 minutes and remove from the pans to a wire rack.  Makes about 2 ½ dozen.
