Easy Caesar Salad Dressing
A
traditional Caesar salad often requires a raw egg and anchovies, two
ingredients many people do not care for.
This recipe takes another path and still gets that crunchy, crisp salad
with lots of flavor. And when topped
with grilled salmon, chicken breast or shrimp, this classic salad becomes a
satisfying meal.
Caesar Dressing:
1/2
cup grated Parmesan
1/2
cup olive oil
1/4
cup fresh lemon juice
2
garlic cloves
1
teaspoon Worcestershire sauce
Pepper
In
a blender or food processor, combine all the ingredients and blend until
smooth. Season to taste with
pepper. Pour into a tight lid container
and refrigerate.
Garlic Croutons:
2
tablespoons butter
1/4
cup olive oil
2
garlic cloves, minced
4
French bread slices, cut into ¾ inch cubes
In
a large skillet, melt together the butter and oil. Sauté the garlic. Toss the garlic sauce with the bread cubes. Place the cubes on a baking sheet single
layer and bake at 350 for 15 minutes, or until golden brown.
Salad:
1
large romaine lettuce head, torn into bite size pieces
3
slices bacon, cooked, crumbled
1/2
cup blue cheese
Dressing
Croutons
In
a large bowl, toss together the lettuce, bacon and blue cheese. Add enough dressing to season to taste and
toss well. Garnish the salad with croutons
and serve. Serves 4
