Quesadilla Pie


Quesadilla Pie

I prefer this easy to assemble entrée with green sauce (Verde) and others like it with the traditional chunky red salsa.  Try it and see which one you like best.  You can also use any of your favorite shredded cheeses.  I use mozzarella.

2 cups cooked, chopped chicken
1 ½ cups Verde sauce or chunky salsa
1/4 cup sour cream
3 – 7 inch tortillas
1 ½ cups shredded cheese
1 cup fresh spinach

In a large bowl, combine the chicken, ½ cup of the sauce and the sour cream.   Spread ½ cup of the sauce in a deep dish pie plate that has been mist with cooking spray.  Press 1 tortilla into the pie plate, top with half of the chicken mixture.  Sprinkle an even layer of cheese on top and place half of the spinach on top of the cheese layer.  Repeat the layers, reserving ¼ cup of cheese.  Top with the final tortilla and spread with the remaining ½ cup of sauce and sprinkle the reserved cheese.  Cover with foil, bake at 350 for 25 minutes or until the cheese melts.  Cool and slice into wedges to serve.  Serves 6 to 8.
