Dutch Baby Apple Pancake

This large puffed pancake is wonderful warm and even better at room temperature.  You can make it on a moment’s notice for a fun Saturday morning breakfast.

1 apple, peeled, sliced thin
1 ½ teaspoons cinnamon
1 ½ teaspoons sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt
1/4 cup chopped walnuts (optional)


In a small mixing bowl, mix together the cinnamon and sugar.  Mix 1 teaspoon of the cinnamon mixture with the sliced apple.  In a pie pan that has been mist with cooking spray, arrange the apples in a single layer. In a mixing bowl, whisk together the eggs, vanilla, flour, milk and salt.  Pour the egg mixture over the apples and sprinkle the remaining cinnamon mixture and walnuts over the top.  Bake at 400 for 20 minutes or until puffy and golden brown.  Serves 4
