Caramelized Salmon Rub

Caramelized Salmon Rub

Rub:
1/4 cup brown sugar
1 tablespoon garlic salt
1 teaspoon pepper
1 teaspoon dried citrus peel (lemon or orange)

In a small container with a lid, combine all the above ingredients.

4 salmon fillets (about 4 ounces each)
1 tablespoon olive oil

Rub each salmon fillet with the olive oil and sprinkle the rub over the top of each.  Place the salmon on a baking sheet lined with parchment paper.  Bake at 350 for 15 minutes, or until the fish flakes when pierced with a fork.  Serves 4
