Chocolate Pizzelles

Chocolate Pizzelles

This classic Italian cookie is a crisp chocolate wafer that compliments a cup of coffee or tea.
You must have a pizzelle iron to bake the cookie and these can found at most higher-end gourmet retail outlets. 
12 ounces chocolate chips
12 tablespoons butter
2 cups flour
1 teaspoon baking powder
3 eggs
3/4 cup sugar
2 tablespoons almond extract
Pizzelle Iron

In a small saucepan, melt together the chocolate chips and the butter.  In a small mixing bowl, blend together the flour and baking powder.  In a separate mixing bowl, beat the eggs and add the sugar and the extract. Add the melted chocolate mixture to the egg mixture and stir together.  Add the flour mixture, one cup at a time, to the chocolate mixture.  While waiting for the pizzelle iron to heat up, place the pizzelle mixture in the refrigerator to thicken. When the iron is hot, place 1 tablespoon of the pizzelle mixture on the center of each pattern.  Lower the iron’s lid and bake for 1 minute and 20 seconds.  Remove the pizzelle with a spatula and place on a rack to cool.  Repeat the process. Store in a tin to maintain the crispness. Makes 3 ½ dozen pizzelles.
